It is my pleasure to bring to you Sipping Bliss Digestif, a treasure trove of Australian wine making history from the cellar of WJ Seabrook and Son Est 1878.

In a Tawny Port style, I started creating Sipping Bliss back in 1982 from a Talavera Port from the famous WJ Seabrook soleros which was started in the 1880's. The soleros includes port and sherry from South Australia, Muscats and Tokay from Rutherglen and a port base from Saltram, Seppelts and Hardys.

Most of the storage barrels (including mine) were old Portuguese quarter casks. These, as well as Spanish sherry casks, gave the fortifieds a distinctive hose style.

"Deep dark tawny colour, with yellow tints on the meniscus. Very aged, complex, tawny port bouquet of burnished timber, walnuts, coffee, dark chocolate and lots of aged rancio - but it's also clean and fresh.
A fabulous nose! The taste is no less impressive; tremendously concentrated and powerful, deep and wonderfully complex, but not at all overpowering. Sweetness balances the acid, alcohol and tannin astringency nicely.

It's very moreish. The wine is quite sweet, but the finish is clean, not cloying."

I recommend enjoying this Digestif with chocolate and nuts after a meal or for a treat, pour over a good quality vanilla bean ice cream.
